Day 2: Getting Creative

Today was a hard long day. We processed our first payroll of 2016 and we're still working on closing 2015. Let's just say my stress level is kinda high at the moment.  



After work I had to run to Target. Grab a few things before heading home. That means getting home a little later than I want. Making dinner later than usual and not to mention I won't be able to get my walk in because of this crazy rain. By the time I sit down it is going to be well after 7 pm. After making my hubby's dinner and talking on the phone (my mama called) I was starving. This is when things can go south very quickly. 


My mind was too gone to grab the instructions on how to fix day two's meal. I really wanted to eat one of those uncured all beef hot dogs I just bought for my hubby. I don't buy them often, but those are what he likes. He says they taste better. Back in 2015 (lol), I had a few.. but I am trying to limit that kind of food and eat cleaner. This 30 day challenge is really challenging me to change my eating habits and get creative.
 

With that in mind, I grab the frozen Alaskan Sockeye Wild Caught Salmon, olive oil, the Original Mrs. Dash salt free and the skillet. After 20 minutes pan searing it, I cut it up and threw it on top of some kale, shaved brussel sprout and radicchio to create a salad. Then I whipped up some Lemon Garlic Vinaigrette dressing. Tossed it on the salad just enough for it to coat it. I was pretty surprised. It was really really good. 

I actually enjoyed it. Going to have to make it again. The Lemon garlic vinaigrette dressing is a little tart, and just perfect for salads. 


Here are the Ingredients:

½ cup olive oil
¼ cup cider vinegar
3 cloves garlic grated
1 lemon, juiced
1 tsp dried thyme
1 tsp salt
¼ tsp pepper
1 tsp dijon mustard
1 Tbls honey


Instructions: Combine all the ingredients in a mason jar or plastic container with a tight fitting lid. Shake well for 30 seconds. Serve. Store in fridge for up to a week.

I really impressed myself. I felt like I was stuck, but I didn't let it overwhelm me. I still found something to eat that was good for me. I won. Wonder what day 3 is going to bring?
